Ingredients

  • Meatballs
  • 350g ground beef, 80/20 (12.3 oz)

  • 150g ground pork (5.3 oz)

  • 40g fresh breadcrumbs (about 1/2 cup)

  • 60ml whole milk (1/4 cup)

  • 1 large egg (50g)

  • 1 small yellow onion, finely grated (70g)

  • 15g unsalted butter, melted (1 tbsp) – for the onion

  • 1 tsp Worcestershire sauce (5ml)

  • 1/2 tsp ground allspice

  • 1/4 tsp ground nutmeg

  • 1 tsp kosher salt

  • 1/2 tsp freshly ground black pepper

  • 10ml olive oil (2 tsp) – for tossing before air frying

  • Gravy & Finishing
  • 15g unsalted butter (1 tbsp) – for gravy

  • 20g all-purpose flour (2 tbsp)

  • 300ml beef stock (1 1/4 cups)

  • 120ml heavy cream (1/2 cup)

  • 1 tsp Dijon mustard (5ml)

  • Salt and black pepper to taste

  • 50g lingonberry jam (about 3 tbsp)

Directions

  • Prepare the breadcrumb binder – combine 40g breadcrumbs and 60ml whole milk in a bowl and let soak for 2-3 minutes. Grate the onion and quickly sauté it in 15g melted butter over medium heat until translucent, about 3-4 minutes. Let cool slightly.
  • Mix meatball ingredients – in a large bowl combine 350g ground beef, 150g ground pork, soaked breadcrumbs, the sautéed onion, 1 beaten egg, 1 tsp Worcestershire, 1/2 tsp allspice, 1/4 tsp nutmeg, 1 tsp salt, and 1/2 tsp pepper. Gently mix with your hands until just combined – do not overwork.
  • Shape and oil – portion mixture into 18 meatballs (about 30-32g each) for even cooking. Lightly brush or toss the meatballs with 10ml olive oil so they brown in the air fryer.
  • Air fry – preheat the air fryer to 190°C (375°F). Arrange meatballs in a single layer with space between them and air fry for 12 minutes, turning once at 6 minutes, until golden and an instant-read thermometer registers 71°C (160°F). Work in batches if necessary.
  • Make the gravy – while meatballs cook, melt 15g butter in a medium skillet over medium heat. Whisk in 20g flour and cook 1-2 minutes until nutty. Gradually whisk in 300ml beef stock until smooth, then add 120ml heavy cream. Simmer gently for 4-5 minutes until slightly thickened, then whisk in 1 tsp Dijon and season to taste.
  • Finish and serve – transfer air-fried meatballs into the gravy and simmer together for 1-2 minutes to coat and heat through. Serve immediately with mashed potatoes or egg noodles and a spoonful of lingonberry jam.
