Air Fryer Hot Honey Salmon Bites

These Air Fryer Hot Honey Salmon Bites are a small-plate revelation: tender, caramelized cubes of salmon with a sticky, spicy-sweet hot honey glaze and lightly crisped edges. Cooking in the air fryer concentrates heat around each bite so the exterior gets a delicate crunch while the interior stays moist and flaky, a texture contrast that feels indulgent but cooks up quickly. The glaze balances floral honey with a bright hit of hot sauce and a whisper of soy for savory depth, while a light dusting of cornstarch builds an almost battered crisp without heaviness. In about 30 minutes you have an impressive main, shareable starter, or protein-packed snack that pairs beautifully with rice, greens, or lettuce cups and always leaves people asking for the recipe.

Perfect Texture Every Time

Air frying is the secret behind these Hot Honey Salmon Bites: it concentrates heat around each cube, encouraging the cornstarch coating to crisp quickly while keeping the interior silky and moist. Start with uniform 2.5 cm (1-inch) cubes so each piece cooks evenly, and use a light toss of cornstarch and oil to build that golden exterior without heavy batter. The air fryer basket lets hot air circulate, producing bite-size crunch where a pan might steam. When glazing, apply a thin layer of hot honey and return the bites briefly to the basket so the sugars caramelize rather than burn – this step takes only a few minutes but transforms texture and flavor. The result is contrast – crisp edges, tender center, and a sticky, lacquered glaze that clings to every surface.

Quick Weeknight Winner

These salmon bites are fast, versatile, and showy – perfect when you want something impressive with minimal fuss. Serve them over steamed jasmine rice or coconut-lime rice to soak up the hot honey glaze, or tuck them into butter lettuce leaves for a lighter, hand-held option. For a crunchy contrast, scatter thinly sliced scallions, toasted sesame seeds, and a squeeze of lime on top. Leftovers make a terrific topping for salads or grain bowls and reheat well in the air fryer for 4-5 minutes to refresh crispness. To vary heat and sweetness, swap some honey for maple syrup or swap sriracha for a chili-garlic paste. For paleo or low-carb eaters, omit cornstarch and increase a touch of olive oil for searing.

Ingredients

  • Main Ingredients
  • 450 g salmon fillet, skinless, cut into 2.5 cm (1-inch) cubes (15.9 oz)

  • 15 ml olive oil (1 tbsp)

  • 2 tbsp cornstarch (16 g)

  • Glaze
  • 45 g honey (3 tbsp)

  • 15 ml hot sauce (1 tbsp)

  • 15 ml low-sodium soy sauce (1 tbsp)

  • 1 tsp sesame oil (5 ml)

  • 1 tsp lemon juice (5 ml)

  • Seasonings & Garnish
  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp fine salt

  • 1/4 tsp ground black pepper

  • 2 tbsp sliced scallions (optional) – garnish

  • 1 tsp toasted sesame seeds (optional) – garnish

Directions

  • Preheat the air fryer to 200°C (400°F). Pat the salmon dry and cut into uniform 2.5 cm (1-inch) cubes. In a bowl, toss the cubes with 2 tbsp cornstarch, 15 ml (1 tbsp) olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper until evenly coated.
  • Lightly oil the air fryer basket or spray with nonstick spray. Arrange the salmon cubes in a single layer with space between pieces to allow airflow. Air fry at 200°C (400°F) for 12 minutes, shaking or flipping gently once at about 6 minutes to promote even browning.
  • While the salmon cooks, whisk together the glaze: 45 g (3 tbsp) honey, 15 ml (1 tbsp) hot sauce, 15 ml (1 tbsp) soy sauce, 1 tsp sesame oil (5 ml), and 1 tsp lemon juice (5 ml) until smooth.
  • After the initial 12 minutes, brush the salmon bites with about half the glaze so they are lightly coated. Return the basket to the air fryer and cook an additional 6 minutes at 200°C (400°F), watching carefully so the sugars caramelize but do not burn. Total active air fryer time is 18 minutes.
  • Remove the salmon bites carefully, toss with any remaining glaze, and let rest 1-2 minutes. Garnish with sliced scallions and toasted sesame seeds if using. Serve immediately over rice, in lettuce cups, or as a shareable plate.
