Air Fryer White sausage baked with onion and bacon

This air fryer white sausage baked with onion and bacon is a rustic, flavor-forward dish that turns humble ingredients into something irresistible. Plump white sausages sear until golden while ribbons of smoky bacon render and crisp, mingling with sweet, caramelized onion that softens and concentrates in the hot air fryer. The result is all about contrast: a snappy exterior and juicy interior, salty bacon crunch, and a mellow onion sweetness that ties everything together. It’s fast enough for busy evenings yet satisfying and slightly indulgent, making it perfect for a cozy dinner or a centerpiece for a casual weekend table. Simple seasoning, a quick mustard glaze, and a final parsley scatter lift the dish into something you’ll want to make again and again.

Perfect Texture Every Time

The secret to perfectly baked white sausages in the air fryer is heat, spacing, and a little patience. Start with room-temperature sausages so they cook evenly; the air fryer’s circulating heat crisps the casings without drying the interior. Lardons of bacon release fat that helps caramelize the onion while crisping – but give them room to breathe so they brown instead of steaming. Turning the sausages once at the halfway mark ensures even color and an appealing snap. A light brush of Dijon before the final minutes boosts depth without burning. When the bacon is deeply browned and the onions are soft and jammy, the contrast of textures is exactly what makes this dish joyous: crisp, smoky, sweet, and satisfyingly meaty in every bite.

Quick Weeknight Winner

This recipe shines because it’s fast, forgiving, and versatile. Prep takes about 10 minutes: slice the onion, cut bacon into lardons, and nestle sausages on top. The air fryer does the heavy lifting in 18 minutes at 190°C (375°F), so you can make a quick salad, heat potatoes, or prepare mustard and bread while it cooks. Swap herbs, add a splash of cider vinegar with the onions for brightness, or wrap individual sausages in bacon for extra indulgence. Serve with grainy mustard, crusty bread, or buttered potatoes to soak up juices. Leftovers reheat brilliantly in the air fryer for 5-6 minutes at 170°C (340°F) and taste nearly as fresh as day one.

Ingredients

  • Main Ingredients
  • 500g white sausages (about 6 links) (17.6 oz)

  • 150g smoked bacon, sliced into lardons (5.3 oz)

  • 1 large yellow onion, sliced (about 200g) (7 oz)

  • 15ml olive oil (1 tbsp / 0.5 fl oz)

  • 1 clove garlic, minced (about 3g) (0.1 oz)

  • Seasonings & Garnish
  • 1 tbsp Dijon mustard (15g) (0.5 oz)

  • Salt, to taste (start with 1/4 tsp)

  • Freshly ground black pepper, to taste

  • Fresh parsley, chopped, for garnish (about 5g) (0.2 oz)

Directions

  • Preheat the air fryer to 190°C (375°F) for 3-5 minutes. While it preheats, pat sausages dry and set aside at room temperature so they cook evenly.
  • Toss the sliced onion, minced garlic and bacon lardons with 15ml (1 tbsp) olive oil and a pinch of salt and pepper in a bowl so everything is evenly coated.
  • Arrange the onion and bacon mixture in an even layer in the air fryer basket or in an air fryer-safe dish. Nestle the white sausages on top, leaving small gaps between them so hot air circulates.
  • Cook at 190°C (375°F) for 18 minutes total, turning the sausages and tossing the onion and bacon once at the 9-minute mark for even browning. Check that sausages reach an internal temperature of 70°C (160°F) or are thoroughly cooked.
  • In the final 2 minutes, brush sausages lightly with 1 tbsp (15g) Dijon mustard if you want a tangy glaze; return to the air fryer just long enough to set the mustard.
  • Remove everything to a platter and let rest 3 minutes. Sprinkle with chopped fresh parsley and adjust seasoning with salt and pepper. Serve with extra mustard, crusty bread, or boiled potatoes to soak up the juices.
