Air Fryer Super Crispy Pork Belly

This Air Fryer Super Crispy Pork Belly produces a showstopping contrast – impossibly crunchy crackling and a meltingly tender interior – without the fuss of deep-frying or a long roast. A simple dry-brine with salt and a touch of baking powder draws moisture from the skin and helps the air fryer deliver glassy, crackling texture while a moderate initial cook preserves succulence. Finish on very high heat to puff and blister the rind, then rest so juices settle into the meat. The result is richly porky, savory slices with a clean lift from a quick soy-vinegar glaze or a squeeze of citrus. It is adaptable to Asian spice or herb rubs and scales up easily, making it perfect for an indulgent weeknight or a special dinner.

Perfect Texture Every Time

The secret to perfect crackling in an air fryer starts with moisture control and heat staging. Score the skin shallowly and pat it bone-dry, then apply a dry brine – salt plus a small amount of baking powder – to roughen the skin and encourage even blistering. The air fryer excels at circulating very hot air, so begin with a moderate roast at 180C (355F) to render fat without scorching the rind, then finish at 200-205C (390-400F) to blister the skin into glassy shards. Use a rack or elevated trivet so hot air circulates around the slab and rotate if your basket blocks airflow. Resting after cooking lets juices redistribute so each slice is succulent beneath the crackle. Follow these stages and you get consistent, restaurant-quality texture every time.

Serving, Variations and Practical Tips

Serve the pork belly sliced against the grain so each bite balances crisp skin and tender meat; a small spoon of soy-honey-vinegar glaze or a citrus-soy dipping sauce brightens the fat. For Asian notes add 1 tsp ground five-spice to the meat rub, or use fennel, rosemary and garlic for a porchetta-style finish. Make-ahead options include dry-brining in the fridge uncovered for 4-12 hours to intensify crisping – just allow extra time. Leftovers re-crisp beautifully in the air fryer at 200C (390F) for 5-8 minutes. Watch closely during the high-heat finish to avoid burning, and adjust time for thicker slabs. These practical tips let you tailor flavors and timing while keeping that signature crunch.

Ingredients

  • Main Ingredients
  • 700 g pork belly, skin-on (1.5 lb)

  • 1 tbsp neutral oil – sunflower or vegetable (15 ml)

  • 1 tbsp light soy sauce (15 ml)

  • 1 tbsp rice vinegar (15 ml)

  • 1 tbsp honey (15 ml)

  • Seasonings
  • 12 g kosher salt for the meat (2 tsp)

  • 10 g kosher salt for the skin (2 tsp)

  • 5 g baking powder (1 tsp) – aluminum-free

  • 1 tsp ground five-spice – optional (2 g)

  • 1/2 tsp freshly ground black pepper (1 g)

Directions

  • Score the pork skin in parallel lines about 3-5 mm apart without cutting into the meat – use a very sharp knife. Pat the entire piece thoroughly dry with paper towels. Mix the 10 g salt and 5 g baking powder and rub evenly into the skin, then rub the meat side with 12 g salt, black pepper and five-spice if using.
  • For best results place the seasoned pork uncovered on a tray in the refrigerator for 4-12 hours or overnight to dry the skin. If short on time, let it rest at room temperature for 30 minutes before cooking – drying will still help but is less effective.
  • Preheat the air fryer to 180C (355F). Lightly brush the skin with 1 tbsp neutral oil to help even browning. Place the pork skin-side up on an elevated rack or trivet in the basket so air can circulate. Cook at 180C (355F) for 25-30 minutes to render fat and cook the meat gently.
  • Increase the temperature to 200-205C (390-400F) and continue cooking for 8-15 minutes to blister and crisp the rind – monitor closely during this stage as the crackling can go from perfect to burnt quickly. If your air fryer has hot spots, rotate the pork after 6-8 minutes.
  • While the pork rests, whisk together soy sauce, rice vinegar and honey. When the pork comes out, rest it on a cutting board for 10-15 minutes so juices redistribute. Brush the meat side lightly with the glaze if you want a savory-sweet finish, then let it sit 2-3 minutes more.
  • Slice against the grain into portions that show crackling on each piece. Serve with dipping sauce or a light salad or steamed rice to cut the richness. To reheat leftovers, place slices in the air fryer at 200C (390F) for 5-8 minutes to re-crisp the skin.
