  • 1 tsp garlic powder (approx 3g)

  • 1/2 tsp smoked paprika (approx 1g)

  • Optional – pinch red pepper flakes or 1/4 tsp ground fennel for variation

Directions

  • Prepare the mixture – in a medium bowl, combine 540g ground pork (1.19 lb), 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp dried sage, 1/2 tsp dried thyme, 1 tsp garlic powder, and 1/2 tsp smoked paprika. Add 1 tbsp (15ml) cold water to help bind. Mix gently with your hands until just combined – do not overwork the meat or it will become dense.
  • Form patties – divide the mixture into 9 equal portions (about 60g / 2.1 oz each) and shape into 1.5 cm (1/2 in) thick rounds. Press lightly in the center of each patty so they cook evenly. If the mixture feels soft, chill the formed patties in the fridge for 10 minutes.
  • Preheat the air fryer – preheat your air fryer to 190°C (375°F) for 3 minutes. Lightly spray the basket with neutral oil spray if your basket is prone to sticking.
